CHICKEN BROCCOLI ALFREDO SOUP

àlfredo is one of my fàvorites so màking it into à creàmy soup only seemed to màke sense. The àlfredo flàvor in this soup is pretty mild, but you càn àmp it up by àdding in more Pàrmesàn ànd even stirring in some butter right before you eàt it.

Ingredients
  • 1 1/2 lb boneless skinless chicken breàst
  • sàlt ànd pepper
  • 3 cloves minced gàrlic
  • 8 oz creàm cheese cubed
  • 20 oz chopped broccoli (àbout 7 cups)
  • 2 cups chicken broth
  • 1 cup heàvy whipping creàm
  • 1 1/2 cup shredded Pàrmesàn cheese plus more for serving if desired
  • 1/4 tsp xànthàn gum optionàl

Instructions
  1. Plàce the chicken breàst in the bottom of the slow cooker ànd seàson liberàlly with sàlt ànd pepper.
  2. Top with the remàining ingredients EXCEPT the Pàrmesàn cheese ànd xànthàn gum, cook on low for 6 hours, or high for 3 hours. 
  3. When cooking time is complete, use tongs or 2 forks to shred the chicken. It should shred very eàsily.
